Raw Snickers Bars
Ingredients (Makes 8 large bars)
Bars
5 medjool dates, pitted
1/2 cup smooth peanut butter
1/2 cup hulled tahini
2 tbl maple syrup
1/2 cup melted coconut oil
1 cup almond meal
3 tbl coconut flour
1/3 cup dry roasted almonds, chopped
Pinch salt
Chocolate
1/2 cup melted coconut oil
1/2 cup cacao
2 tbl maple syrup
Method
1. Line a 20 x 20 cm square tin with baking paper.
2. To make the bars, in a food processor, add the dates, peanut butter and tahini and blend to combine.
3. Add in the maple syrup and coconut oil and blend again, then add in the remaining ingredients.
4. Once combined well, transfer the mixture into a lined baking dish and press down with your fingers.
Place into the freezer for at least 1 hour.
5. To make the chocolate, melt all ingredients in a saucepan until just combined.
6. Once the slice has set, remove from the freezer and cut into bars. Dip each bar into the chocolate
mixture and place on a cooling rack and into the freezer. Repeat 2-3 times for extra thick chocolate
coating.
