THE BEST PANCAKES

Option 1: Sourdough BEST flavour (overnight ferment)

Night before:

  • 1 cup sourdough starter (discard or active)
  • 1 cup flour
  • 1 cup milk (or water/kefir)

Morning add:

  • 2 eggs
  • 2 tbsp honey or maple syrup
  • 2 tbsp melted butter (or coconut oil)
  • ½ tsp salt
  • 1 tsp baking soda

➡️ Stir gently (it will fluff up straight away)
➡️ Cook in butter on medium heat

 

 

Option 2: Yoghurt soaked

Night before (this is essential)

  • 2 cups whole grain flour (spelt, kamut, or whole wheat)
  • 2 cups buttermilk, kefir, or yoghurt

Mix together and leave covered at room temp for 12–24 hours to soak


Morning add:

  • 2 eggs (lightly beaten)
  • 2 tbsp maple syrup 
  • ½ tsp sea salt
  • 1 tsp baking soda
  • 2 tbsp melted butter

➡️ Stir everything in, thin with a little water if needed
➡️ Cook in butter on a hot pan or cast iron
