No Crap potato Rosti

What you need:


  • around 3 medium to large potatoes. I did 2 white and 1 sweet potato (peeled and grated)
  • 3/4 cup of grated cheddar or parmesan cheese
  • 1 egg
  • big pinch of sea salt and pepper
  • a tsp of garlic and onion powder (optional)
  • a few tbsp of ghee or butter for shallow frying


METHOD:

  1. grate all the potatoes, place it all in a tea towel and just squeeze out as much liquid as you can
  2. add in all the other ingredients and stir to combine
  3. heat oil over medium heat
  4. press the potato mix into the pan (in round shapes) and cook for around 6ish minutes each side until golden and crispy

Enjoy for breakfast with some eggs, lunch with some protein or dinner!
