Chocolate Beetroot Brownie

Ingredients:
1/2 cup spelt flour/ buckwheat flour or cassava flour (any of these will work)
1 tsp baking powder
1/2 tsp salt
2/3 cup sugar (coconut, raw cane, raw rapadura)
1/2 cup cocoa powder
1/2 cup butter, unsalted, melted
2 medium eggs, beaten
1 heaping cup of grated red beetroot (about 200 grams)
Method:
1. Preheat oven to 170C. Sift flour, baking powder, salt, cocoa powder, and sugar in a medium bowl.
2. Add the melted butter, eggs, and grated beets into the bowl. Mix until thoroughly combined to get a brownie mixture.
3. Pour the mixture into a greased 10 inch cake tin or brownie tray or skillet.
4. Bake for 30mins. Use your finger to do the press test on the middle and if it springs back it’s done!
