Milk Cooked Pork Chops

Ingredients:
- 4 bone-in pastured-raised pork chops
- 500ml raw or organic milk
- 1 onion, sliced
- 1 fennel bulb, sliced
- 3 cloves garlic
- 2 Tbsp fresh thyme
- 100ml white wine or bone broth
- 2 Tbsp Dijon mustard
- 1 Tbsp grass-fed butter
- Sea Salt
- Cracked black pepper
Method:
1. Preheat the oven to 150C. Sweat onion and fennel with thyme, garlic and butter, allowing the mixture to colour slightly.
2. When the onion and fennel mixture is soft, add in the broth or wine and reduce by half. Add in mustard and milk, and turn off the heat.
3. Season the pork chops on each side. Place the chops into a pan and pour over the milk mixture. Cover tightly and bake for 2 hours.
4. Serve with roasted squash or potatoes, rice, green beans.
