Sourdough discard Crepes

Sourdough discard Crepes (could also be a wrap)

 

Ingredients

1 cups of sourdough discard

2 eggs

1/2 cup milk of choice

pinch of salt

2 tbsp of melted butter/ coconut oil

1/4 cup (roughly 2 heaped tbsp) flour (I used spelt) 

Filling options:

  • honey + butter
  • cheese + avo
  • slow cooked meat + guacamole 

 

Method

  1. In a bowl whisk together discard, eggs, milk & melted buter
  2. add salt + flour
  3. whisk until runny 
  4. Heat a pan over medium heat and add a tsp of butter
  5. pour about 1/4 cup (full soup ladle) of batter and swirl the pan quickly to spread thin
  6. cook for 30-60 secs until edges lift
  7. flip and cook for another 20-30sec

 

If you don't have discard just use 1 cup of flour and 1 1/2 cups of milk and everything else the same.
