Slow Cooked Nutty Chicken
1kg chicken thigh, cut into pieces
400 ml coconut cream
1/2 cup peanut butter (can you any nut butter!)
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbl red curry paste (Always check ingredients as some contains lots of preservatives and additives)
2 tsp Coconut Aminos sauce
1 tbl honey
8 cup mushrooms, quartered
2 large carrots, sliced on the diagonal
Cooked and cooled basmati rice, brown rice, zucchini noodles or cauliflower rice.
Steamed greens (broccolini, spinach, silver beet)
Cashews, nut of choice
Add the chicken, mushroom and carrot to the slow cooker.
In a bowl (or better yet a blender), mix together the coconut cream, peanut butter, garlic
powder, curry paste, fish sauce and honey until combined really well.
Pour the mixture over the chicken and mix together.
Cook on low for 5 hours.
Serve with sides of your choice.
