nourishing Chicken congee
Congee is a nourishing, easily digestible rice porridge that has been cooked for centuries for its gut-healing properties. Gentle on the digestive system, it helps calm inflammation and restore balance and is a great addition to your winter healing recipes. It is also a perfect balance of all the goodness you need after birthing a baby!

Ingredients:
1.5 cups organic basmati rice, rinsed thoroughly.
2.5L chicken bone broth
1 onion, peeled and diced
3 garlic cloves
2 tbsp ginger, finely grated
500g grassfed beef or pasture raised pork mince
Salt and pepper
Crispy chilli oil to serve (I love the good bones crispy chilli oil)
3 Spring onions
2-3 eggs, softly boiled to serve
Method:
Add some ghee into a pan and fry off the onions, 2 cloves of garlic and 1 tbsp ginger. Once the onions are soft, add the rice and chicken broth. Bring to the boil then reduce the heat to simmer. Cook for 30-40 minutes or until the grains of rice are like porridge consistency. If you would like the texture more soupy, add more broth.
In a separate pan, add some ghee and cook the pork mince. Add the remining clove of garlic and 1 tbsp ginger and season with salt and pepper. You can add in some coconut aminos or tamari for extra flavour if you wish.
Serve the congee in a bowl topped with the pork mince, freshly chopped spring onions, a soft boiled egg and crispy chilli oil.
