Meaty Bone Broth Minestrone

 

 

Recipe | Meaty bone broth minestrone 

Ingredients:
1 tbsp olive oil
3 medium carrots, sliced
3 stalks celery, sliced
1 small onion, chopped
3 garlic, minced
500g minced pork or beef rolled into little balls 
6 cups bone broth
1 jar of tomato Passata 
300g sweet potato or potato (around 2-3)
3 tbsp fresh parsley
Bunch basil
1 tsp. dried oregano
1/2 tsp. dried thyme
1sea salt 
black pepper
1 cup your favourite pasta (I love sourdough spelt or buckwheat)
To serve: Poached eggs, parmesan and fresh basil 

Method:
1. Sweat carrot, potato, onion, celery, garlic and dried herbs in olive oil over low-med heat. When beginning to soften, add the jar of Passata and bone broth, and allow to simmer for 10 minutes. 
2. Add in of choice pasta and meatballs and simmer for 10-15 minutes.
3. Season to taste and add fresh herbs at the end. 
4. Serve with poached eggs and Parmesan cheese.
