Happy Gut Custard ❤️❤️
1 cup organic milk (or coconut milk for dairy free)
1 cup organic cream (or coconut cream for dairy free)
3 tsp grass-fed gelatin
2 tsp pure vanilla extract
1⁄2 cup raw cacao powder or carob
4 egg yolks
1-2 tbsp pure maple syrup or raw honey
Place the milk, cream and vanilla in a saucepan. Add the gelatin and allow it to bloom (soften into the liquid).
Once bloomed, heat the saucepan over low-medium heat and stir continuously until the gelatin has dissolved.
Add the cacao and whisk until dissolved. Remove from the heat and whisk in the egg yolks and the honey or maple syrup
Pour into a bowl or glasses and set in the fridge for at least 4-6 hours. Serve once the custard has set and is thick like chocolate mousse
