Grass-fed Beef Pot Roast

Ingredients:

Joint of beef (brisket, blade, chuck etc.)

2 onions, diced

4 carrots, diced

2 celery stalk, diced

8 garlic cloves, peeled

2 sprigs fresh thyme or rosemary

1 teaspoon dried oregano

4 cups beef bone broth

Salt & pepper

2 cups button mushrooms

To serve: boiled potatoes with butter

 

Method:

1. Dice the beef into large chunks or leave whole if preferred. Brown the beef in a hot pan until golden all over.

2. Put the browned beef, onion, carrot, celery, garlic, thyme and bone broth into a slow cooker. Cook on low setting for 6-8 hours, adding the potatoes and mushrooms for the last hour of cooking. Season to taste with salt and pepper. This can also be cooked in the oven (95*C) in a casserole dish with a tight fitting lid for the same amount of time - you may need to check on the the liquid level and add more broth or water if required.
