Fluffy Sourdough Burger Buns



I have given a sourdough version and also a yoghurt based version if you don’t have a starter going. Both delicious and the yoghurt still ferments the flour to make them easier to digest

Same-Day Sourdough Burger Buns (8)

Ingredients
• 100 g active starter
• 250 g water
• 30 g olive oil or melted butter
• 20 g honey 
• 450 g bread or plain flour
• 9 g salt
Method
1. Mix all ingredients. Rest 20 min.
2. Stretch & fold ×3 over 90 min.
3. Bulk ferment until ~50% risen (4–6 hrs).
4. Divide into 8. Shape tight buns, slightly flatten.
5. Rest 60–90 min until puffy.
6. Brush milk wash (or egg wash).
7. Bake 200°C, 18–22 min.
8. Butter tops if desired. Cool before slicing


Greek yoghurt fermented buns (8)

Ingredients
• 300 g plain milk kefir
• 30 g melted butter or oil
• 20 g honey 
• 450 g bread flour
• 9 g salt
 - 1/2 tsp baking soda (add at shaping)

Method
1. Mix yoghurt, butter, honey.
2. Add flour + salt. Mix to soft dough.
3. Cover. Ferment 12–24 hrs (room temp).
4. Knead in baking soda. 
5. Divide 8. Shape tight rounds.
6. Rest 45-60mins until slightly puffy.
7. Brush with egg wash or milk
8. Bake 200 degrees Celsius for 18-20mins
