Delicious egg drop soup
Recipe | Delicious egg drop soup. Serves two hungry adults.


Ingredients
2 eggs, whisked in a jug or a cup
5 brussel sprouts, shredded (or whatever in season veg like broccoli, cabbage, silverbeet)
5 mushrooms, sliced
1 tsp ginger, sliced finely
1 spring onion, finely sliced
Small bunch fresh corriander chopped
500g pork or chicken bone broth
1 spicy chilli (optional)
Slurry mixture
1 tbsp tapioca flour
1 tsp toasted sesame oil or extra virgin olive oil
1 tbsp tamari
3 tbsp cold water
Method:
1. Combine the slurry mixture and set aside.
2. Add the bone broth to a small pot and add the brussel sprouts, mushrooms, ginger and half the chilli (if using). Sauté until the vegetables are almost cooked, about 3-5 mins.
3. When simmering, add in the slurry mixture and make sure to mix well. When the soups starts to thicken it’s time to add in the egg.
4. Give the soup one last stir and then drizzle in the egg mixture, leaving a trail in the soup. Do this until the egg is used up. Don’t mix again until you’re confident the egg is set/cooked.
5. The soup is ready to serve now. Garnish with spring onion, coriander, more chilli if desired.
