Brothy Meatballs

Meatballs

 

1 carrot, grated

1 zucchini, grated

2 cloves garlic, grated

1 onion, finely diced

250g pork mince

250g beef mince

½ inch (5 mm) piece of ginger, grated

2 tablespoons coconut aminos or tamari

1 tbsp raw honey

1 free-range, organic egg

Freshly ground black pepper

Sticky Sauce

1 cup chicken or beef broth

3 tablespoons coconut aminos or tamari


Method

  1. Preheat oven to 180 degrees
  2. Add carrot, zucchini, garlic, ginger, onion in a bowl with all the other ingredients
  3. Roll the mixture into walnut-size balls and place in the tray. Cook in oven for 15-20 mins
  4. To make the sauce, heat the broth and coconut aminos or tamari in a large pan over medium heat. Add the meatballs and simmer until the sauce has reduced a little.
