Almond butter stuffed dates 

 

Makes 12 dates

Ingredients

Almond Filling

  • 1 cup activated almonds

  • 12 whole activated almonds 

Dates

  • 12 large Medjool dates

Chocolate Coating

  • 100g dark chocolate

  • 1 tsp coconut oil

Topping

  • Sea salt/ rose petals or almonds crushed

 


 

Method

Make the Almond butter Filling

  1. Roast almonds at 170°C for 10–12 minutes.

  2. Blend until a smooth nut butter forms.

Assemble

  1. Slice dates lengthways and remove pits.

  2. Fill each date with approximately 1 teaspoon of the almond filling. Add whole almond in the centre.

  3. Press the date closed.

Chocolate Coating

  1. Melt dark chocolate and coconut oil together.

  2. Dip each stuffed date into the chocolate.

  3. Sprinkle immediately with chopped toppings

  4. Refrigerate for 20 minutes until set.
