Almond butter stuffed dates

Makes 12 dates
Ingredients
Almond Filling

1 cup activated almonds
-
12 whole activated almonds
Dates
-
12 large Medjool dates
Chocolate Coating
-
100g dark chocolate
-
1 tsp coconut oil
Topping
-
Sea salt/ rose petals or almonds crushed
Method
Make the Almond butter Filling

Roast almonds at 170°C for 10–12 minutes.

Blend until a smooth nut butter forms.
Assemble
-
Slice dates lengthways and remove pits.

Fill each date with approximately 1 teaspoon of the almond filling. Add whole almond in the centre.

Press the date closed.
Chocolate Coating
-
Melt dark chocolate and coconut oil together.
-
Dip each stuffed date into the chocolate.

Sprinkle immediately with chopped toppings

Refrigerate for 20 minutes until set.
