I think this is the most underrated meal to top up your nutrient stores whether it be for gut health, for a new mumma, for someone that may be feeling sick, for a fussy toddler or just a nourishing family meal.
Healing Congee
Ingredients (Serves 4)
2 tbl ghee or olive oil
1 small brown onion, grated
1 medium carrot, grated
160g shitake mushrooms, finely chopped
2 tbl grated ginger
6 garlic cloves, crushed
1 cup white rice (best soaked overnight and rinsed)
7-8 cups of bone broth
½ tbl miso paste
To serve:
3 spring onions, finely sliced
I would also add in some chicken or fish to poach in the liquid.
Method
1. In a large saucepan, add in the ghee and melt, then add in the onion, carrot and mushrooms until they are softened. (I would fry off chicken or fish here too.
2. Next, add in the ginger and garlic and saute for 5 minutes.
3. Add in the soaked rice to the vegetable mixture along with the broth. You will need to cook this for around 30 minutes, giving it a mix every few minutes.
4. When the rice is about 5 minutes from being finished, mix through the miso paste.
